Hey there, Rebels! Can you feel the pancake buzz in the air? That's right, Pancake Day is just around the corner! And here at Rebel Food Company, we're all about celebrating delicious food that's good for you and the planet. So, grab your spatulas and get ready to flip some flippin' fantastic pancakes with us!


Pancake Day, also known as Shrove Tuesday, is a day of indulgence before the Lenten season begins. Traditionally, it's a time to use up rich, fatty foods like eggs and dairy before the fasting period. But fear not, fellow Rebels, because we've got you covered with a mouthwatering vegan and gluten-free pancake recipe that's sure to satisfy your cravings without compromising on taste or values!


Rebel Vegan & Gluten-Free Pancake Recipe:


Ingredients:

  • 1 cup gluten-free all-purpose flour

  • 1 tablespoon coconut sugar

  • 1 tablespoon baking powder

  • 1/4 teaspoon salt

  • 1 cup almond milk (or any plant-based milk of your choice)

  • 2 tablespoons melted coconut oil (or vegetable oil)

  • 1 teaspoon vanilla extract


Instructions:

  1. Mix Dry Ingredients: In a large mixing bowl, whisk together the gluten-free flour, coconut sugar, baking powder, and salt until well combined.

  2. Combine Wet Ingredients: In a separate bowl, mix together the almond milk, melted coconut oil, and vanilla extract.

  3. Combine Wet and Dry Ingredients: Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix, as this can lead to tough pancakes.

  4. Let the Batter Rest: Allow the batter to rest for about 5-10 minutes. This gives the gluten-free flour time to hydrate and helps the pancakes become light and fluffy.

  5. Preheat the Pan: While the batter is resting, preheat a non-stick skillet or griddle over medium heat. You can lightly grease the pan with additional coconut oil if needed.

  6. Cook the Pancakes: Once the pan is hot, pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface of the pancake and the edges start to look set, about 2-3 minutes.

  7. Flip and Cook: Carefully flip the pancakes using a spatula and cook for an additional 1-2 minutes on the other side, or until golden brown and cooked through.
